Outline of Research at the Start

京野菜37品目の中でも特徴的な食品機能性をもつことがわかってきた「桂ウリ」について，摂取したときに胃内ではじめて生成してくるメチルチオ酢酸（MTA）によるがん予防効果と，ある条件下ではアポトーシスを介するがん腫瘍退縮効果が得られることを証明する．絶滅危惧の京野菜がもつ食品機能性を明らかにして日本人の健康増進に寄与し，伝統野菜の食文化を存続させるきっかけとなることにより和食文化継承に寄与することを目的としている．
