Outline of Research at the Start

Controlled Atmosphere (CA)貯蔵は、1～5%の低O2環境を作出し、収穫後園芸作物の鮮度を保つ技術である。しかし、CA貯蔵は鮮度保持効果が高いものの設備費が高く、国内では主に弘前産リンゴの長期保存に利用されている。また、低O2環境下では、呼吸酵素「オルタナティブオキシダーゼ」の誘導が抑制されることが明らかになっている。そこで、人為的に当該酵素活性を抑制すれば、CA貯蔵と同等の鮮度保持効果が得られるとの仮説が立てられる。この方法は高価な設備が不要なため、幅広い産地、品目でCA貯蔵と同等の効果が得られると見込まれる。
