Outline of Research at the Start

本研究は、食物、特に米穀類を主たる対象として、実用書の記述を集約したデータベースを作成し、これに基づいた注釈を加えながら文芸を読み解くものである。つまり、文芸の中に描かれる食材・料理を同定した上で、調理方法、人体への影響、産地や来歴、伝承など、その食物が有する意味を、食生活史のみならず、歴史、思想、社会、科学などの観点から検証する。その検証の成果を再度データベースに反映させることで、「食」に関する言説を統合するのである。このような作業から、日常の行為であり、かつ文化でもある「食」という営みを介して、近世文化を、そしてそれを支えた〈知〉を総体として把握することを目指す。
