Outline of Research at the Start	本研究は、近代的屠場の成立以降、屠畜の＜暴力性＞がなぜ隠蔽されるのかという問題を検討する比較民族誌的研究である。中華圏（中国本土、香港、台湾）のムスリム・マイノリティに焦点をあわせ、近代的屠場の成立・運営、屠師の養成、屠畜技術の習得・継承、職業倫理、食物禁忌などの具体的様相を把握し、また、他地域の民族誌との比較検討を行い、＜暴力性＞が国民国家や地域社会によって隠蔽されることの意味を再考する。
