Outline of Research at the Start	庭木として普及している柿は「在来柿」として知られている．また，「在来柿」を使った加工品として，漬け物の漬け床に柿を入れる「柿漬け」は地域独自の食文化となっている．漬け物には「家庭の味」があり，素材と環境の影響を受ける，材料と微生物叢を連動させたデータの集積と保存，継承が課題である．そこで，本研究では，「在来柿」のDNA分析による来歴の解明と「在来柿」を用いた漬け物「柿漬け」の漬け床内の微生物叢の来歴の解明，そして，それらの関連をプロファイリングすることによって，農業，食品科学，文化研究などの分野に対して，遺伝資源の重要性，食品の品質向上，文化遺産の保存などに寄与することができる．
