Outline of Research at the Start

地球環境問題の議論が活発になる中、食事も重要な考慮のひとつとされている。本研究は多くの子どもが喫食する学校給食に焦点をあて、必要栄養素量を満たし、かつ環境負荷の少ない食事として報告されているプラネタリーヘルスダイエット（PHD）を導入した学校給食モデルを開発することを目的とする。まずは現行の学校給食とPHD完全導入の学校給食のGHG排出量を推定する。その後、学校給食摂取基準を満たし、かつ現行の学校給食のGHG排出量を最小化した最適な食品構成を探索する。さらに、最適な食品構成から組み立てた学校給食を試作し、嗜好調査を行って実装化に向けた分析を行う。
