Outline of Research at the Start	我々は，難消化性オリゴ糖や水溶性食物繊維が共通して，抗炎症作用が報告されているアルカリホスファターゼ（ALP）活性を大腸特異的に上昇させ，この作用が脂質の栄養条件により異なることを見出してきた。一方，主要な糖質源である消化性デンプンは，植物種により特性が異なるが，栄養的な差異や食品成分の機能に与える影響は明らかにされていない。本研究では，難消化性オリゴ糖による大腸ALP誘導をはじめとする腸内環境調節作用に，消化性デンプンの種類の違いが与える影響を検討する。これにより，オリゴ糖の腸内環境改善作用とデンプンの栄養学的特徴との関連性に新規知見を見出すことを目指す研究である。
