Outline of Research at the Start	本研究は、3年間でイナゴ、カイコ、コオロギというような昆虫の加工品を開発することを目的とする。初年度は、エキス化や臭気低減手法の検討を行う。次年度は機能性のうち呈味、匂いについて評価する。次年度と最終年度では安全性（アレルゲン性評価）を含めた機能性の評価を行う。また機能性について、抗酸化、血圧降下作用、寿命延長効果などをin vitro試験で評価する。評価結果に基づいて販売可能な加工品を開発し、自給率向上や他の未利用資源への応用を目指します。
