Outline of Research at the Start	鉄貯蔵タンパク質として知られる大豆フェリチンが活性酸素の産生を引き起こしにくい食品由来成分であるという可能性に着目し、本研究では大豆フェリチンによる細胞老化制御への影響を検討する。細胞老化制御に関与する転写因子ならびに炎症物質に与える影響などから、大豆フェリチンの新たな機能性を検証する。
