Outline of Research at the Start

甘味は快をもたらし嗜好性の高い食に欠かせない。甘味の主な役割は、エネルギー源としての糖を感知することと考えられがちだが、古代からノンシュガーの甘味を摂食してきた歴史から、甘味の生物学的意義をもう一度見直す必要がある。本研究では、申請者らが新たに見出した親油性で甘い化合物について、分子レベルから脳における知覚の観点において受容および認知機構を明らかにして甘味の意義を解明することを目的とする。
