Outline of Research at the Start

天然甘味成分として利用されているラカンカモグロシド類から腸内細菌による脱糖化によって産生されるモグロールの機能性の解明、および脱糖化酵素を同定して酵素学的性質を明らかにすることを目的とする。本研究による食品機能性を持つ配糖体とアグリコンによる異なった機能性を明らかにすることは、食品機能分野にデュアル機能性という新たなコンセプトを提示することが期待される。
