Outline of Research at the Start

植物の二次代謝産物フィトケミカルは機能性が期待される食成分の一つであり、高い健康効果が期待されているハチミツにも含まれている。しかしながら花蜜からハチミツに至るまでのフィトケミカルの動き（動態）については充分に調べられていない。本研究ではフィトケミカル配糖体に着目し、マヌカ植物を一つのモデルとし、植物・花蜜からハチミツまでの配糖体の合成及び成分変化に関して検討する。ハチミツにおける成分変化を物質レベルで追跡する。本研究により、質の高いハチミツの生産、消費者への本物認証（蜜源保証）を実現する。
