Outline of Research at the Start

茶ポリフェノールのエピガロカテキンガレート(以下、EGCg)は、様々な生体調節機能や保健機能を発揮することが知られている。しかし、生理的pH条件ではすみやかに酸化して酸化縮合物(以下、OxEGCg)を生成することから、経口摂取したEGCgは口腔から消化管を通過中または吸収後の血中で酸化しやすいと考えられる。そこで本課題では、EGCgの経口摂取時に市販茶飲料に添加される酸化防止剤（ビタミンC）の共存が、消化管内のEGCg/OxEGCg比やこれらの吸収性や生理活性発現機構に及ぼす影響を調べる。
