Outline of Research at the Start	食品分野等で広く利用されている乳化分散では、多くの乳化剤（界面活性剤）が使用されており、乳化剤の添加は製品の品質や風味の低減、また安全性の低下を引き起こすため、乳化剤を使用しない、あるいは使用量を削減するための乳化分散技術が求められている。これまで、乳化剤に替わる素材として1 μm未満の泡（バブル）であるウルトラファインバブルに着目してきた。液滴とウルトラファインバブルが比率的に「丁度良い」場合は、粒子径に変化がなく高い分散安定性を示す傾向が見られたが、まだ不明な点も多い。本申請では、乳化剤フリーを目指し，ウルトラファインバブルを用いた乳化分散に適した条件を探索し，新しい乳化分散技術を目指す。
