Outline of Research at the Start	野菜や果物は理想的な食事に欠かせないが、世界的にその消費量は推奨摂取量をはるかに下回っており、低所得国では特にギャップが顕著である。一方、世界で生産された食料の3分の1が消費されずに失われており、野菜・果物では特にロスが大きい。野菜・果物の生産・流通・消費にはさまざまな課題が存在するところ、家計調査と市場調査を通して野菜・果物の①消費量、②食環境、③食品ロスの実態を明らかにし、低所得国で野菜・果物の消費量を増加させ、食品ロスを削減するにはどうすればよいかを提言する。
