Outline of Research at the Start

Existence of circadian rhythm (CR) and correlation of storage condition and expression of clock genes along with quality changes in soybean sprouts was found. However, the relationships of CR and quality changes caused by physical stresses during storage and transport, which cause quality deterioration, have not been yet clarified. In addition, the control of quality by using circadian clock (CC) are not available in postharvest fresh produce. Thus, this study aims to clarify the CR altered by postharvest physical stresses and to propose the quality control method by using CC information.
