Outline of Research at the Start

The measurement basis of Vis-NIR spectroscopy for vegetable freshness assessment is unclear. This research aims to develop a reliable Vis-NIR method with a known working mechanism by integrating Vis-NIR spectroscopy and multi-omics analysis. The specific process is as follows:
(1) identify freshness-marker metabolites through NMR metabolomics,
(2) elucidate metabolic pathways of the identified freshness-marker metabolites through proteomics and define a freshness index,
(3) develop a freshness-marker-based Vis-NIR method for vegetable freshness prediction.
