Outline of Research at the Start

ラテンアメリカにおけるカカオ豆の主要生産国の1つであるペルーでは、この10年間にカカオ豆の生産と輸出が増えている。この理由として考えられるのが、輸出農産物の高付加価値化と、国内での高価格チョコレートの製造である。このような動きは、単にカカオ豆の生産・輸出の一時的な増加にとどまらず、国内のカカオ・チョコレート産業の発展につながる。本研究では、ペルーのカカオ・チョコレート産業の発展とその要因を、生産者、流通・加工・輸出業者、チョコレート製造業者の行動から明らかにする。そして、産業の今後の発展に向けた課題を考える。
