申請者らはこれまでに、Pediococcus pentosaceus TOKAI 759m株で作製した豆乳ヨーグルトを肥満マウスに投与することで認知機能の改善を確認した。また、腸管に存在する膜小胞(EVs)が抗炎症作用に寄与する可能性を見出したものの、腸管EVsが脳に移行するか、また認知機能改善に寄与するEVs中の作用分子は未だ明らかにしていない。本研究では、発酵食品摂取による腸内菌叢の改善に着目し、豆乳ヨーグルトの摂取により産生される腸管 EVsの変化と脳への移行、さらにEVs中に内包されるsRNAやタンパク質などの作用分子の探索を行う。
