THe present study was done to scientifically find the reasons for the outbreak by Staphylococcal enterotoxin incriminated in dairy products in Osaka and 2000. when staphylococcal cells were inoculated in raw milk and stored at the temperatures ranging from 36 C to 48C, the most production of the toxin was observed at 40 C (or 44 C). That temperature was the same as that of the causative milk in the outbreak. THen the pretreatment for the toxin measurement in dairy products were improved, because it takes a lot of time and work in the present pretreatment. As a result, the application of cation-exchange ion chromatography was successful in recevery, the amount of work, and sensitivity.
