Outline of Research at the Start	本研究の目的は、申請者が進めてきた遺跡から出土した食料残滓（生ゴミ）の研究を発展させ、「出土資料による研究成果」と「文字資料による研究成果」を融合して、古代における食生活を総合的に解明することである。具体的には、①古代の遺跡から出土した食料残滓の分析、②古代における食生活の地域性や階層性の検討などを実施する。本研究により、「保存食に偏った貴族食」や「画一的な貧しい庶民食」、「唐からの一元的な影響」という従来の古代の食文化観を大きく見直すことで、食生活史への貢献が期待できる。
