Outline of Research at the Start	申請者らの誇る卓越した味覚・嗅覚成分のデジタル化技術を基盤とし、ヒトを代替できるAI官能評価技術を構築し、これまで未踏とされている個人の食の嗜好性の理解へ挑戦する。そのためには、 ①食品の風味（味覚・嗅覚）をありのままにデジタル化する技術を確立し、 ②ヒトによる官能評価（特に、QDA法）を再現・代替できるか否かを検証し、 ③AI官能評価を用いた個人の食嗜好の可視化（デジタル風味情報を用いて、個々の食嗜好に寄与する成分の特定と予測アルゴリズムの構築）を目指す。
