Outline of Research at the Start	カンピロバクター食中毒は、我が国で最も発生件数が多い細菌性食中毒であり、主な原因食品は生や加熱不十分の鶏肉である。カンピロバクター食中毒の発生件数が減少しない要因は、鶏肉のカンピロバクター汚染率が高い状態で流通・販売されていることである。本研究では、制御剤として注目されているバクテリオファージ（ファージ）を用いた効果的な制御法の構築を目指す。これまでにカンピロバクター制御材として有用な複数のファージ株を保有しており、ファージとの併用によってカンピロバクター制御効果を高める抗菌物質を特定し、ファージ単独使用よりも効果的なカンピロバクター制御法を構築することを目指す。
