Outline of Research at the Start	健康長寿のモデルとされる百寿者（100歳以上の長寿者）の著名な特徴として、糖尿病および動脈硬化性疾患の罹患者が極めて少ないことが知られている。これらの疾患の発症には、幼少期からの食生活が深く関わるため、糖尿病および動脈硬化性疾患の予防を目指した食品の提唱は、健康長寿の実現に直結する成果となる。本研究では、菊芋に含まれる機能性成分の有効性および加工に伴う変化を解析し、これらを糖尿病および動脈硬化性疾患予防食品として利用する上での基盤形成を目指す。
