Outline of Research at the Start	近年、パルス電界の食品性状改変技術への応用が着目され始めているが、未解明な部分が多く情報が不足している。本研究は、パルス電界印加により食品に生じる性状変化とこれが加工操作に及ぼす影響を体系的に調査し知見を集約すること、および食品性状変化メカニズムを解明することを目的とする。最終的には、産業応用を担保する科学的根拠となる学術的な基礎データの蓄積を実現し、パルス電界を用いた食品・加工操作の改変技術の確立につなげる。
