Outline of Research at the Start

イネ玄米γ-オリザノール(OZ)は血中コレステロール低下作用等を示し、米ヌカ由来OZは医薬品に利用されている。しかし、OZは10種以上の混合物であり、その合成量を高める機構の全貌は不明である。申請者らは、イネ品種ライブラリーから総OZ含量が高い品種集団を見出し、総OZ量や特定分子種量と相関候補性の高い遺伝子座を発見している。そこで本研究では、これらの知見を利用して高OZ含有良食味玄米の開発とイネのOZ合成機構の解明、さらにOZ分子種ごとの機能性の違いに関する解析を目指す。
