Outline of Research at the Start

すでに樹立したニホンウナギ由来の筋芽細胞株を活用し、培養ウナギ肉の実現に向けた基盤技術の開発を行う。筋芽細胞を大量に増やすための培養手法、筋組織を立体的に構築するための三次元培養系、ならびに線維芽細胞との共培養による分化促進技術を検討する。ニホンウナギは絶滅危惧種であり、資源保全と食文化の両立には、自然に依存しない持続可能な食料生産技術の確立が不可欠である。本研究はその基礎を築くものである。
