Outline of Research at the Start

本研究では、物価の優等生とされながら生産の持続性が危ぶまれるモヤシを取り上げ、フードシステムの全体像とその動態を描き出す。とくに、価格発見（価格形成のプロセス）に着目した取引関係の分析を深めながら、適正な価格形成をはばむ構造の解明をめざす。これらを通して、持続的なフードシステムの形成に向けた課題を示すとともに、農産物の低価格問題や価格転嫁の問題の改善につながる知見を見出したい。
