Outline of Research at the Start

酵母は食品分野を中心に研究されており微生物資源としても重要であるが、自然界ではまだ分離・同定されていない未知の酵母が多く存在する。畜産飼料分野でも酵母は未解明な点が多く、発酵飼料（サイレージ）中で増殖する酵母は、飼料の変敗や消化性悪化に関与する一方、反芻動物の第一胃内発酵・消化を強化するとの報告もあり、飼料品質や動物に対する有益・有害酵母の違いは明らかでない。そこで本研究では、サイレージにおける酵母の多様性とその機能解析を行い、サイレージ品質変動に関わる有益・有害酵母の違いを飼料内動態、表現型、ゲノム比較から明らかにし、サイレージの酵母の制御・利用法を探索する。
