Outline of Research at the Start

食べ物のテクスチャー（いわゆる食感）を捉える能力は、食の楽しみや安全な食事の摂取に関与すると考えられるが、その検査方法は確立されていない。本研究課題では、口腔テクスチャー感受性低下を評価するスクリーニング検査法を開発する。また、その方法を用いて若年者と高齢者の比較、および口腔テクスチャー感受性と他の口腔機能や食欲・食品嗜好の関連を関連を明らかにし、オーラルフレイルの診断に口腔テクスチャー感受性の検査を含めることの妥当性についてついて検討する。
