Outline of Research at the Start

要支援者は、嚥下機能が低下すると摂取できる食品に制限が生じたり、食事形態が低下することがある。要支援者に対する食支援が必要であるが、これまで食品自体がもつ効果に注目した研究は少なく、食事療法としてのエビデンスは不足している。近代西洋医学と代替医療等を統合することで、ヒトの生体機能を調整し、総合的な健康の維持増進に役立てる医療を「統合医療」といい、食事療法は健康な生活に不可欠な「食」や「栄養」と関連する。
これらは摂食嚥下リハビリテーションとの親和性が高いと考え、幅広い世代に馴染みがある食品を用いて、摂食嚥下リハにおける食事療法および食支援の有効性を明らかにしたい。
