Outline of Research at the Start

肥満や生活習慣病の増加によって，これら疾患の予防対策が喫緊の課題である．脂質栄養学に基づいた栄養指導などが重要であるが、その基盤となる脂質代謝については、EPAやDHAなどのn-3系をはじめとする多価不飽和脂肪酸の生理機能については多くの研究成果があるが、食品脂質中で半分程度を占める一価不飽和脂肪酸については、オレイン酸など一部についてのみ理解されている状況である。本研究では，最近健康改善効果が認められ注目され始めたナッツ類やナツメなどの果実に含まれる各種一価不飽和脂肪酸の代謝動態の解明を目指し，生活習慣病予防への寄与の観点から動物細胞への取込みや代謝動態などの栄養科学的研究を推進する.
