Outline of Research at the Start

わが国では食品ロスの削減が国の重要課題と位置づけられ、SDGsにおいても言及されている。環境省が「3010運動普及啓発用三角柱POP」を公表し、宴会時の食べ残しを減らす重要性が指摘されており、これらを探ることが食品ロス削減には必要不可欠である。
本研究では、宴会時の食べ残しの実態を把握する。そのために、飲食店に対してヒアリング調査で宴会時の食品ロスに関する現状把握と課題抽出を行う。協力の得られた飲食店で宴会時に三角柱POPを利用した「3010運動」の呼びかけ方法の有無による食べ残し量を比較し、呼びかけ方法の効果を明らかにする。そして、今後の宴会での食べ残し削減への呼びかけ方法の方向性を示す。
