Outline of Research at the Start

現代日本における家庭料理の「手作り」規範の強さと「栄養」概念の浸透は強くかかわっている。本研究は、栄養と国策が強く結びついた戦時期の「国民食」に注目し、その内容の検討と戦後の展開を分析することで、栄養（や栄養士）とジェンダーがどのように結びついていったのかを明らかにする。さらにそれらが都市／農村において「家庭料理」規範の浸透とどうかかわったのかを考察する。
