Outline of Research at the Start

味噌や納豆などの発酵大豆製品には、非発酵大豆製品よりも機能性成分が豊富に含まれていることが分かっており、主に循環器疾患予防効果が期待されてきている。イソフラボンは女性ホルモン様の作用を有することから、がん（特にホルモン感受性がん）罹患やがん死亡率への発酵・非発酵大豆製品の影響の違いを明らかにすることが求められている。本研究では、大規模疫学調査により大豆製品（発酵および非発酵）摂取とがん罹患・がん死亡との関連を縦断的に検討することを目的とする。また、発酵・非発酵大豆製品の結果を比較検討することにより、イソフラボン形態の重要性を明らかにする。
