Outline of Research at the Start

10代の食物アレルギーによるアナフィラキシーは、公共の場での誤食が原因であることが多い。食行動が拡大する10代は食の情報収集、取捨選択し摂取することを自ら判断するヘルスリテラシーが求められている。本研究では、地域コミュニティにおいて、食物アレルギーを有する10代がヘルスリテラシーを向上させることを目的に、食事をつくる料理人および管理栄養士からアレルギー対応のメニューの考案、提供を受け、地域とのつながりを深める場「マルシェ」を開発し、その効果検証する。本研究の成果は、食物アレルギーを有する10代の孤食を改善するための新たなアプローチを示すものである。
