Outline of Research at the Start

本研究では、DART-MS分析によりカンキツ果実に含まれる化学成分プロファイルを取得し、ヒトのストレス状態に関する主観・客観的指標との関連を明らかにする。まず、ストレス緩和効果が報告されているユズ、カボス、シークワーサー等を対象に、成分の網羅的解析法を確立し、品種間の特徴を明らかにする。次に、取得した成分情報と唾液中バイオマーカー、自律神経指標、脳波等のストレス関連指標との関連を多変量解析や機械学習により統合的に解析し、ストレス緩和に寄与する成分の特定および予測アルゴリズムの構築を行う。
