| Research Abstract |
肝細胞内の酸素分圧低下と食品中抗酸化物質の作用変化に関する本研究の結果をまとめると以下のようになる。
ラット潅流肝臓において、エタノールとスチレンを同時投与すると、給餌条件下ではスチレン代謝は抑制、非給餌条件下では高進することが明らかになった。
また、ラット潅流肝臓において、亜硝酸塩とエタノールの同時投与でも、給餌条件下ではエタノールによる亜硝酸代謝の抑制がおきることが示された。
肝薬物代謝酵素系の主要酵素であるチトクロームP-450は、寒冷刺激により、その活性が高進し、環境ストレスの影響を受けていることが示された。
肝細胞中の抗酸化物質であるグルタチオン流出にはプロテインカイネースCが関与していることが明らかとなった。
四塩化炭素による肝障害に対して、低酸素は障害促進的にビタミンEおよび塩化第2鉄は障害保護的に作用することが明らかになり、さらにビタミンEの肝細胞障害保護作用は休息期に大きくなる時刻依存性のあることが判明した。
以上の結果より、食品中抗酸化物質は肝細胞障害に保護的に作用し、その保護作用は休息期に大きく、食品中抗酸化物質の作用は低酸素などの環境ストレスや摂取時刻により影響されることが明らかとなった。
