抗酸化ビタミン・脂肪酸摂取に関する半定量食事調査法の評価研究

Research Abstract

岩手県二戸、秋田県横手、長野県佐久、沖縄県石川の4保健所管内の中年期の夫婦127世帯253名を対象に、我々が開発した半定量食品摂取頻度調査票による調査を平成7年と8年の2月に2回実施した。現在、調査票の回答から各種栄養素の摂取量を計算するための成分表データベースとプログラムを開発中である。
また、その食品摂取頻度調査票の精度を評価する目的で、同じ対象者に7日間連続の秤量法食事記録調査を平成6年の2、5、8、11月に4回行い、合計28日分の記録を収集していたが、これらのデータのコーディングを終了し、個々の栄養素摂取量を計算した。
同じ対象者から、平成6年2、8月の2回採血を行い、血清を-80℃で保存していたが、沖縄を除く3地域の対象者の検体を解凍し、高速液体クロマトグラフィーによりα-トコフェロール、レチノール、カロテノイド、(α-カロテン、β-カロテン、ルテイン、リコペン)の血中濃度の測定を終了した。カロテノイド濃度の季節変動は、地域により異なる特徴を示した。すなわち、秋田では2月より8月の値が高く、長野では8月より2月の値が高く、岩手では2月と8月で大差がないという傾向があった。一方レチノールは、いずれの地域でも明らかな季節変動はなかった。2月と8月の測定値の相関係数は、リコペンで最も低く(男0.03、女0.12)、α-トコフェロール(男0.70、女0.80)とレチノール(男0.66、女0.89)で高かった。
今後、血中濃度の季節変動や地域差を考慮し、28日分の食事記録調査からの栄養素摂取量を参照しながら半定量食品頻度調査票の精度を評価する予定である。
