Outline of Final Research Achievements

Sweet taste is mediated by the sweet taste receptor, TAS1R2 + TAS1R3, with multiple biding sites for structurally diverse chemical substances. Using the sweet receptor assay in heterologously transfected HEK293 cells, we examined the sweet-modifying effect of miraculin. As a result, intracellular acidification was found to be required for the effect of miraculin.
