Outline of Final Research Achievements

The purpose of this study was to analyze the characteristics of the salmon industry in Sanriku and Hokkaido, formed mainly by fishery, processing and distribution of chum salmon (Oncorhynchus keta), and to identify its food system. Chum salmon's food system is established with a starting point for an artificial hatchery and release project using the broodstock which returns to the rivers. However, due to declines of the volume of collected chum salmon and decreases in consumption, many set-net fishery management bodies, and the processing and distribution companies have been less dependent on chum salmon. According to a series of the surveys on the food system that the salmon industry has built, we examined how to respond to structural changes, and proposed its directions.

Academic Significance and Societal Importance of the Research Achievements

従来、サケのフードシステムは漁獲する時点から消費までの過程で捉えられてきた。本研究ではふ化放流事業を出発点として位置付け、漁業経営体、産地の流通加工業、消費地の市場を含む過程を対象に分析してきた。北海道東部、東日本大震災で被災した三陸の水産業を事例としてとりあげ、海洋環境の変動や消費需要が低迷するなか、サケのフードシステムがどのように構造変動を迫られているかを明らかにした。また、輸出志向を強める水揚産地の実態を分析しながら、グローバル商品であるサケがもつ可能性を検討した。
