水産資源の豊富な我が国では、各地で様々な魚介類を利用した塩蔵食品が生み出されている。また健康志向の高まりと保冷技術の進歩から、塩蔵食品の低塩分化が進んでいるが、それによる食中毒リスクの上昇に関しては深刻にとらえられていない。2007年、低塩分のイカ塩辛による大規模な腸炎ビブリオ食中毒が発生したことからも、現代の低塩分の塩蔵食品の安全性を評価することは重要である。本研究では、低塩分の塩蔵食品の細菌汚染及び食中毒リスクについて明らかにし、さらに広く一般消費者に対して減塩化のメリットを活かしつつ、食中毒リスクの上昇を抑えるための微生物制御法の開発を目指すこととした。
本年度は、日本及び海外での各種の塩蔵食品の市場調査及び食品衛生学的調査を実施し、消費者ニーズをふまえたうえでの安全安心な低塩分の塩蔵食品について、幅広く情報収集を実施した。また日本各地でみられる塩蔵食品は、各地の家庭で調理製造されていることも多く、食品企業の食品製造現場以外の場所で製造されている機会も多いことから、そのような現状をふまえた塩蔵食品中での微生物制御法について検討した。

Reason
これまでの塩分濃度を指標とした塩蔵食品の細菌性食中毒に対する安全性の評価についての知見をもとに、日本及び海外での製造及び消費されている塩蔵食品について情報収集を行った。また、それら塩蔵食品の細菌汚染検査を実施し、食品中での食中毒菌の制御法について多角的に検討することとした。

日本及び海外で製造され、市販されている塩蔵食品について、詳細な細菌学的な調査を実施し、塩蔵食品中での微生物制御法の開発を予定している。

| Causes of Carryover |
数千円単位での残金が生じたことから、翌年度の予算と合算して研究実施のために使用する。
