| Research Abstract |
オリーブ油の中でもポリフェノールや、クロロフィルなどの微量成分を多く含むエキストラバージンオリーブ油に着目し、脂質代謝及び蛋白代謝への影響について調べる。本研究は、特に、ラットを用いてin vivo及びin situ実験系によって調べることにより、栄養機能特性の解析を行い、これまで判然としなかったエキストラバージンオリーブ油の健康への有効な効果について明らかにする
