Research Abstract

歯周病の原因と考えられるNO_2、N_2O_3およびNOSCNの生成は、口腔内が酸性になった場合に大きくなった。また、これらの化合物は口腔内に存在するアスコルビン酸、グルタチオンや食品に含まれているポリフェノール類によって消去された。以上のことから、歯周病予防には口腔内pHの低下の抑制と抗酸化物質の摂取が重要であることが分かった。
