| Research Abstract |
麻ひ性貝毒(PSP)による貝類の毒化は公衆衛生上の問題であるだけでなく、貝類の養殖産業や流通産業に大きな被害をもたらしている。麻ひ性貝毒は還元型プリン骨格を持つ複数の成分の総称であり、11位に硫酸エステルを持つグループと11位が還元されたグループに大別される。本研究は、11位に硫酸エステルを持つPSP成分のL-システインならびにその誘導体と反応し無害化される機構、ならびに11位還元型のPSP成分が種々のポリフェノールと反応し、無害化される機構を検討したものである
