Outline of Annual Research Achievements |
In the spring of 2020, our university cancelled classes due to the growing pandemic. This effectively halted the progress that had been made so far on the project. We stopped at about 25% completion of the target course development. The MOOC software framework was deployed, the mobile application was functioning, and the contents of the course were being converted from the old format hosted H5P on a WordPress website to the new format that is straight H5P natively in Moodle. No further progress has been made on the MOOC development manual. Working with the hospitality services industry became very difficult due to the pandemic. Contact between the research team and the hospitality resources was stopped as a result. In the fall of 2020, the research team shifted its focus from developing MOOC resources to developing on-demand lessons for university classes. Much of what was learned in the MOOC content development process could be applied to the on-demand lessons. The on-demand curriculum development and deployment was completed during the fall semester and delivered to nine classes simultaneously. The data from the activity in those classes is being analyzed to see trends in how students made access to the activities. A research paper was written for the school research journal to explain the process and the experience of developing those courses.

3: Progress in research has been slightly delayed.
Reason
The pandemic arrival caused huge delays for the project. The main reason was the shift from face-to-face lessons to online and on-demand classes for the emergency remote teaching. The team shifted its focus away from the MOOC/Mobile application and on to developing on-demand curriculum for the current university classes. The choice to stop developing the mobile application was taken. The skills learned in developing the MOOC contents have been applied to the on-demand lessons. On-demand video shifted from an animated format to a live in-person format. The completion tracking and conditional access systems in Moodle were used similarly to the MOOC course in order to guide progress through the courses. It was extremely beneficial to have the previous MOOC research completed when the university shifted from face-to-face lessons to online and on-demand classes. However, the connection between the researchers and the hospitality industry resources has been temporarily discontinued as a result of the pandemic.

Strategy for Future Research Activity |
The completion of the project has been postponed by one year. The team hopes to finish studying about on-demand and online content development. The team will continue to present about the things that have been learned in this development project. The team will make use of the on-demand curriculum to boost the development of the MOOC course and learn about the limits of doing so. However, much of what the team can do is limited by the constraints of society during a pandemic. It is difficult to attend conferences in-person to present about the project, however, the team will try to present at online conferences when it is possible. If it is possible, a guide on developing MOOCs and on-demand curriculum will be developed.

Causes of Carryover |
The pandemic caused the plans to promote the research domestically and internationally on hold. No travels to conferences were made so no expenses were incurred. The team participated in online conferences that have small expenses and primarily the research budget wasn't required for those expenses. By delaying the completion of the project by one more year, it is hoped that the team will be able to make use of the remaining budget by attending a domestic conference and/or one international conference.
