| Research Abstract |
溝型の流路をもつ測定器を簡易型粘度計に展開するために測定器におけるニュートン性および非ニュートン性の試験液の流れを実験的に解析した. 本測定器による非ニュートン性液状食品の粘性評価について得られた知見をまとめると次のようになる
・測定器における流れを層流として, 1s^<-1>以下のオーダーの剪断速度を測定できる.
・測定器における流れは摩擦係数とレイノルズ数の関係として整理され, その実験的関係は, 液状食品の, 物理的意味が明確な粘度を評価するのに有効である.
・容易な操作での本簡易型粘度計の使用法として特定の流動長さに対する経過時間の測定が推奨される.
