| Research Abstract |
我々のこれまでのアントシアニンの吸収・代謝・臓器分布の研究から、その生理機能に無色の代謝物が寄与していることが強く示唆される。生体での無色代謝物の探索の基礎として生理的条件下でアントシアニンの分解と退色産物を経時的に追った。試みた5種のアントシアニン全てで、中間生成物としてレトロカルコンをLC-タンデムMS分析により初めて明瞭に捉える事に成功した。レトロカルコンの生成は5~10時間で最大となり、その後さらに分解が進む。
