Research Abstract	戦後の日本における食生活の変化は、(1)「食生活の洋風化と外部化」として整理される。これらに加えて、所得の増加とともに(2)健康志向が強まることも事実である。食料自給率に関して、(1)は低下要因、(2)は増加要因とみなされているため、現状では全体でどうなのかよくわからないままである。このような疑問に答えるために、国産食料に対する消費者の志向が食料需要に与える影響について、需要体系分析から明らかにした。
