| Research Abstract |
近年の健康ブームにより、食品を本来の栄養源(基本特性)や嗜好品(補完特性)として捉えるだけでなく、医薬品に代わる「健康機能性」(生理機能特性)としての新たな付加価値が求められている。そこで、食品中に含まれる成分や栄養素を対象にして、科学的な実験データに基づく新規な生理活性を見出して、真実の『機能性食品』(Evidence Based Functional Foods)として開発することを本研究の目的とした。
研究の内容・方向性としては、次の3つを計画した。(1)分子レベル(酵素・タンパク質)→(2)細胞レベル(培養細胞を使用)→(3)動物レベル(マウスを使用)、という流れで、栄養素・食品成分の生理活性調査と機能性の検証を実施した。
